Sunday Roast Beef Stew Recipe

Sunday Roast Stew Recipe. One of the most classic, and under appreciated meals. Right? My mom cooked this meal every Sunday, for as long as I can remember. It cooks for most of the day in the crock pot, and it makes the house smell wonderful. It is hearty, flavorful, and so simple. This is a recipe worth sharing!

Roast Prep

My roast in this recipe is sirloin tip, and one of my other favorite cuts is chuck roast.

4 potatoes

2 carrots

4 cloves garlic

1 celery rib

2 cups of broth

1 medium onion

1 4-5 lb roast

Turn your cast iron skillet on medium high and let it warm up, in the mean time cut up the potatoes, carrots, celery, rough chop the garlic, and put it in the crock pot. Add 2 cups of broth. Chop the onion, and set it aside. Go back to the skillet, and (carefully) drop the meat in. Let the roast sear for about 3 minutes on each side. The point is not to cook it,the crock pot will do that later. You want to “fry” the outside of the meat. It enhances the flavor of the stew, and it is most definitely worth the few minutes that it takes. It will look like the picture below.

When it is done, lift it and place it on top of the vegetables in the crock pot. Sprinkle the onion on top of everything, and then some salt and pepper. Put the lid on the crock pot, turn it on low, and step away.

Before Serving Dinner

About 30 minutes before you want to eat, lift the roast onto a cutting board. Let it cool for a few minutes, and then chop it up or shred it. Add it back to the crock pot, and stir it in so that the meat is sitting in the broth. Serve with a generous scoop of veggies and broth.

  10. About 30 minutes before you want to eat, lift the roast onto a cutting board.
  11. Let it cool for a few minutes, and then chop it up or shred it.
  12. Add it back to the crock pot, and stir it in so that the meat is sitting in the broth.
