  • 4 potatoes
  • 2 carrots
  • 4 cloves garlic
  • 1 celery rib
  • 2 cups of broth
  • 1 medium onion
  • 1 4-5 lb roast
  1. Turn your cast iron skillet on medium high and let it warm up.
  2. In the mean time cut up the potatoes, carrots, celery, rough chop the garlic, and put it in the crock pot, and add 2 cups of broth.
  3. Chop the onion, and set it aside.
  4. Go back to the skillet and (carefully) drop the roast in.
  5. Let the roast sear for about 3 minutes on each side.
  6. When it is done, lift it and place it on top of the vegetables in the crock pot.
  7. Sprinkle the onion on top of everything.
  8. Put the lid on the crock pot, turn it on low.
  9. Let it cook for about 6 hours.
  10. About 30 minutes before you want to eat, lift the roast onto a cutting board.
  11. Let it cool for a few minutes, and then chop it up or shred it.
  12. Add it back to the crock pot, and stir it in so that the meat is sitting in the broth.
